Pureed Veggie Soup

Ingredients

  • 1 onion

  • 1 bell pepper

  • 2 white potatoes or 1 sweet potato

  • 4 carrots

  • 4 stalks celery

  • 2 large handfuls of spinach

  • Onion powder

  • Garlic powder

  • Paprika

  • Salt

  • Black pepper

  • Chili flakes (optional)

Preparation

  1. Dice onions, peppers, carrots and celery

  2. Sautee vegetables in a small amount of water until the onions start to turn translucent

  3. Add garlic powder, onion powder, paprika, salt, pepper and chili flakes

  4. Add water until it covers the vegetables

  5. Add spinach to the soup

  6. Allow the soup to boil until the potatoes are soft

  7. Once the vegetables are cooked, add them to a blender and puree until smooth
